Hand-picked in the spring, its processing involves a longer withering time out of direct light—which allows for slight oxidation—yielding a more robust flavor and rose-gold liquor color than other white teas.

Abundant silky silver buds stand out among the dark leaves, contributing aromas of white flowers and fresh berries, with prominent balsamic-woody notes and a sweet hay flavor. Characteristic of Yunnan teas, the taste lingers through long steeping sessions. Use water below boiling, or try ambient or cold infusion for a different perspective.

Country: China
Tasting Notes: grape, daisy, hay

Approximately two servings

--

180-185º F

3-5 grams, 2-3 minute steep

½ full, 1 minute steep
